Hello! My name is Julie! I will be sharing my favorite recipe with you!

Banana Pancakes!

They are really like German Pancakes, Popover Pancakes or Hootinanies, or whatever people call them, but they are better because of the banana sauce! This has been my favorite recipe/food since I was little and my mom would bake these for us on Saturday mornings. (Although, they are delicious enough to eat at any time on any day of the week!) And... I could probably eat these every day and not get sick of them. They are that good. But enough about my childhood memories and eating habits!

Pancakes:
3 eggs
2/3 C. Flour
1/4 tea. Salt
1 Tbl. Sugar
1/2 C. Milk
4 Tbl. Butter (melted)
1 tea. Lemon Peel (optional)

1. Preheat oven at 400 degrees.
2. Mix dry ingredients in small bowl. Beat eggs in medium bowl. Stir dry ingredients into eggs, alternating with milk. Stir in 2 Tbl. of melted butter.
3. When oven is hot, insert 2 pie pans into the oven for 5 minutes (I use glass ones, but aluminum works just fine)
4. Take pans out of oven after 5 minutes and pour remaining 2 Tbl. of butter in pans.
5. Evenly pour batter into both pans.
6. Cook pancakes for 18-20 minutes.



Banana Sauce:
1/3 C. Butter
1/3 C. Orange Juice
1/3 C. Brown Sugar
3 Sliced Bananas

*I usually wait until the pancakes have been cooking for about 12 minutes, because the sauce doesn't take very long at all! Sometimes double the OJ & Brown Sugar for more sauce, because it's DELICIOUS!)
1. On medium heat, melt butter in a pan.
2. Add orange juice and brown sugar.
*Do not let the sauce boil!!*
3. Add bananas to sauce (do this last, so they don't get mushy)
4. Don't forget to smother the pancakes with sauce and sprinkle with powdered sugar!

This could feed 1-4 people, depending on how much you like to share! :)
